Matthew joined UCP of Central Florida in 2022 as the Director of Child Nutrition & Food Services. Matthew has 25 years of culinary experience ranging from fast food to a James Beard Award-winning restaurant. Prior to working for UCP, he was a District Manager of food services for long-term care facilities from Jacksonville to Orlando.


EDUCATION

  • Bachelor of Science in English Literature from E. Stroudsburg University of Pennsylvania

  • Certified Dietetic Manager, Certified Food Protection Professional from University of Florida


POSITION RESPONSIBILITIES

  • Provide guidance, training, and support to kitchen staff.

  • Ensure compliance with USDA school meal standards.

  • Create and monitor Wellness Policies.

  • Ensure food safety and satisfactory kitchen inspections from oversight agencies.

  • Work with school staff create, monitor, and manage school gardens.

  • Provide nutrition education to students.


COMMUNITY INVOLVEMENT

  • Habitat for Humanity

  • St. Bernard Project (Rebuilding homes in New Orleans)


WHY I LOVE UCP

I love working at UCP because there's nothing more important to me than feeding people, and no one needs healthy, delicious food more than children. I'm grateful that UCP gives me the opportunity to feed and teach such a diverse community of students; I learn from them every day.  Also, I love feeding kids because they are always honest about what they like!
